Beef dinner
My wife and I loved the beef medallion dinner, although my preparation of it did us no favors.
We would definitely have this dinner again. I overdid the meat, and put too much oil in the rice/quinoa mix, making the end result to heavy, like Chinese take-out heavy.
So the drawbacks were self-induced, and I'd love to have a shot at cooking this better to di it justice.
For both meals we've been really impressed with the quality of the food - the orange, the beef. It made me feel great about eating it and serving it. The seasoning and sauce was not as spicy as we had expected, we both could have gone for a bit more punch.
I will email photos directly as you suggested. In the meantime the two things that really impressed us, that would be worthy of emphasis as selling points, is the qulity of the food and the time to prep (really 15 minutes). The dried cherries with the beef was a great touch.
RESPONSE TO COMMENTS:
I followed the directions for the chicken much more closely than I did with the beef, for two reasons:
1- having seen how easy the chicken was I was a little more lax in following instructions/more likely to wing it. Should not have been, but I was.
2- my wife was home the night we did the chicken, but not the beef. Also the beef night was a weeknight, not a weekend night. It's hard to describe how chaotic that hour around dinner is with three tired, cranky kids and 1 parent - that was part of the issue for sure.
-The beef dinner provided the perfect amount of food for us - basically both of our meals, plus I got enough to bring to lunch the next day. For us, that's perfect - I like to and always bring something from hom (often leftovers) to work the next day.
- The quality of the beef was great. Although it was slightly tough in the end, I am confident that that was my issue - I cooked it for tool long, at too low a heat. It looked and smelled great through out.

Glad you enjoyed the beef dinner! A few questions for you:
ReplyDelete- With the chicken dinner you mentioned you followed the instructions... did you follow the recipe while prepping the beef dinner too? Why or why not? Just wondering if that affected your preparation and some of the prep drawbacks you mentioned.
- Did the beef dinner provide the right amount of food for you and your wife?
- Any thoughts on the texture of the beef? How about the aroma of the overall dish?
We'll keep an eye out for your photos for both the chicken dinner and the beef dinner by email. Also looking forward to reading your thoughts on the final reflection questions, 10 - 14. Thanks!
